It’s delicately flavored with cardamom powder.

In addition to that it’s garnished with loads of dry fruits. For making this sweet dish, grated carrots are slow cooked/simmered in milk till they turn tender and milk is thickened.

After that, sugar is added to sweeten it and in the last ghee is added to get a perfect glossy look. In the last, it’s garnished with chopped dry fruits.

You all must be wondering how’s that possible to make rich and calories laden halwa in just 1 spoon of ghee. Trust me it tastes equally delicious and you won’t be missing anything in halwa.

Traditionally for making gajar halwa, carrots are first sauted in ghee and then it’s simmered in milk. Once cooked, sugar is added to it in the last.

However the way my Mom used to make gajar ka halwa is totally different and awesome.

I have always stick to make halwa her way by cooking grated carrots directly in milk (no sauteing in ghee initially), then add sugar and only a spoonful of ghee in the end to round it off.

I know I am quite late in posting the recipe of very simple recipe of gajar halwa on the blog.

Few years ago I shared the recipe of Gajar halwa spring rolls served with warm rabdi, but did not make a separate post about Gajar ka halwa thinking that everyone makes it and who needs the recipe of it.

But after sharing this recipe on Instagram and many other social media platforms, I got several requests asking for gajar ka halwa recipe.

So here’s my way of making gajar halwa, that I have been making since years.

Step by step instructions and pictorial presentation to make

 

To make gajar ka halwa we will need red long carrots. Peel wash and grate the carrots and keep aside.

In a thick bottom pan, pour milk and bring it to boil.

Drop the grated carrots into it and let it simmer on medium flame.

Keep stirring it constantly on regular intervals.

Once the carrots are cooked and turn soft & mushy, you will notice that milk gradually starts to reduce and turn thick like mawa/khoya.

It will take around 1.5 hours to reach this stage.

At this time add sugar and cardamom/elaichi powder. Mix and cook further till sugar is dissolved and the water released from the sugar dries up completely.

Before turning off the flame add a spoon of ghee/clarified butter and give a nice mix.

Taste it and adjust the sweetness according. Transfer this to serving bowls and garnish with chopped pistachios.

Serve hot.

If any leftovers, which I am sure won’t be, refrigerate it and warm it again while serving.

  • 1 cup sugar
  • 1/2 tsp cardamom powder
  • 2 tsp pistachios chopped
  • 1 spoon ghee/clarified butter
