Cantaloupe, mozzarella and prosciutto are a match made in heaven. Similar to some other classic combos (tomato, basil, mozzarella – I’m looking at you), it’s pretty perfect as-is. However, sometimes you get the urge to switch it up and make it a little extra. This melon, mozzarella and prosciutto salad takes the classic combination and adds a few unique touches, making it perfect to serve at a variety of occasions:

  • Appetizer at your dinner party
  • Side salad at your summer grillout
  • On its own as a light dinner or lunch

Crispy prosciutto is a real game changer and if you haven’t tried it before, be prepared to become obsessed and top everything with it. A simple bake in a 350 oven for 15 minutes takes mouthwatering prosciutto flavor to another level.

Ingredients

  • 1
    cantalope
  • 1
    container
    mozzarella pearls
  • 1
    pack
    prosciutto
  • 3
    cups
    arugula
  • 1
    cup
    basil leaves
  • 1
    cup
    mint leaves
  • 1/2
    cup
    pine nuts

Instructions

Prep Ingredients

  1. Lay prosciutto in a single layer on a baking sheet and toast in a 350 degree oven for 15 minutes. Remove from oven and allow to cool before breaking or chopping into bite-size pieces.

  2. Cut the cantaloupe in half, remove seeds, and use a melon baller to scoop into small rounds. 

  3. Toast pine nuts by heating in a dry pan over a medium-low heat for approximately 5 minutes until they begin to develop a light brown color.

  4. Wash and dry arugula, basil, and mint. Chop basil leaves if they are large, leave small-medium ones whole.

  5. Drain mozzarella from liquid.

Prepare Salad

  1. Arrange all ingredients on a large serving platter in the following order: arugula, cantaloupe, mozzarella, mint, basil, prosciutto and pine nuts. Serve and enjoy!
