
Sri Lankan Pancakes
This is a sweet from Sri Lanka which is more suitable for tea time.
Pancakes are stuffed with a mixture of coconut & sugar. Also it doesn’t take much time to prepare this.

Recipe : Sri Lankan Pancakes
Ingredients (for about 7-8 pan cakes)
For Pancakes
1/2 cup all-purpose flour
1 egg – beaten
¼ tsp baking powder
Pinch of turmeric (optional)
salt to taste
1/2 cup coconut cream(milk)
For Filling:
1/2 cup grated coconut.
About 3 tbspn of brown sugar (or to taste)
1 green cardamom crushed.
Salt & Pepper to taste(optional)
Method:
Sift flour & baking powder together.
Add beaten egg & whisk well.Gradually add milk and make a batter.
Adjust salt & add a pinch of turmeric.
Whisk well & keep the batter aside for about 15 minutes.
Meanwhile, make the filling.
Dissolve sugar in 2-3 tbspn water. Bring this sugar water mixture to boil in a pan in medium heat.
Then add the grated coconut & cardomom & mix well. Adjust salt & pepper (optional)
Keep aside to cool.
Making the Pancakes:
Before making the pancake, strain the batter to avoid any lumps. This will give smooth pancakes.
Heat a nonstick pan over medium heat for about 1 minute & coat it with a drop of cooking oil.
Once it is hot, spoon some batter on it & swirl the pan to distribute it evenly & to make a round shape.
Cook until lightly brown.
Remove to a plate.
Immediately spread about a spoon of filling onto cooked pan cake.
Then roll it.
Repeat with the remaining batter.
Serve hot & enjoy!!
